Metalquimia QDS
QDS (Quick Dry Slice) is a revolutionary accelerated drying process for sliced meat products. Applied directly after fermentation, the product undergoes a quick tempering drying phase at a controlled temperature and humidity. This is followed by a drying and maturing phase, again in a modified and controlled atmosphere.
The result is a finished meat product ready to package, but without the extensive drying phase. With this simplified maturation process, total processing time and energy costs are drastically reduced, while retaining the consistency and regularity of the product.
