Injection Machines
Nu-Meat, in conjunction with Metalquimia, s.a. of Girona, Spain, has been the leader in supplying the most durable industrial injection machines ever manufactured. Spray injection technology, invented by Metalquimia in 1972, has proven to be the only technology capable of injection levels from five to 100 percent with no increase or reduction in the pump pressure. Using high-pressure technology delivered by hydraulic gear pump to a brine piston pump, the machine’s spray delivers a constant velocity of brine during the injection cycle, no matter what desired pump percentage is needed.

Marine Injectors
Since the inception of commercially sold marinated poultry products in the United States, Metalquimia has been looking at technologies that would incorporate spray injection in a machine designed only for marination. The solution, adjustable spray injection, is successful in our machine installations, and it quickly became the leader of a new segment within a very mature industry. |
| Brine Mixers and Automated Brine Storage
Hand in hand with our injection machinery is the necessity for efficient brine and marinade preparation. We turned to our friends at Menozzi in Italy to automate the mixing of dry and liquid ingredients with water. They have 15 years’ experience building brine-mixing machines, and were able to fulfill our desire to control the entire process from water preparation to a final chilled product with a marketable turn-key brine preparation plant. Ammonia-jacketed mixers and tanks, high efficiency glycol-jacketed mixers and tanks, and the upcoming “high shear” machine provide the technological solution. |
Emulsifiers
We and our partners at Inotec GMBH introduced the patented design of our two-and three-plate emulsifier systems that enable processors to manufacture product to exact specifications. This is the only machine on the market that will set its own knife plate to knife distance automatically, ensuring precise non-operator controlled emulsion cutting. Using a servo motor and microprocessor, we determine the distance of the complete cutting assembly as it relates to all of the other components (knives, plates, etc.), and then this position is constantly adjusted to maintain the precise cutting and temperature rise desired. |
Tenderizers
Fava tenderizing machines for whole-muscle tenderizing meet the expectations of every packer who has ever operated these units. With the built-in recapture of liquid and the infinitely adjustable walking beam conveyor, we have solved many tenderizing needs not previously addressed. The machine is built with longevity in mind, and can be used for fresh beef, cooked and smoked hams, and turkey production when combined with the appropriate knife for the application. |
